Developing Large-Scale Sustainable Local Egg Markets

Via a request for technical assistance, the MSU Center for Regional Food Systems investigated how local egg growers could develop large-scale markets. The exploration revealed that by converting medium eggs to liquid form via small-scale egg cracking machines local growers can have the opportunity to step into large-scale markets and be competitive.
